Notes
February 9th: Unreal! The nose is subdued, but the body and the flavour is immaculate. The hops are just suspended by a smooth, round and rich body and the hops just jump out at you. There are two things I'm looking forward to happening in this beer. 1. the bitterness fades. At the moment it is a little sharp/ raw. And 2. the nose of the beer to become more pronounced (which will happen given that I've added the last 3/4 of the dry hops listed above in-keg).
This beer is loaded, and I mean, loaded with hops. It's a very yellow, sunshiney flavour. Very lemon like, very citrusy and passionfruit forward/ peach. Damn. I get a little bit of the dankness from the Falco and a touch of the citra esque flavours, but this is overall a Galaxy show. Again, looking forward to how the nose develops and how the body and bitterness mellow out and meet halfway.
February 26th: Bready, sweet and soft malty nose on this beer is really nice. The nose is quite fruity, with nose of peach, melon and lemon. A nice round and soft nose, but not as pronounced as I'd like it to be. The appearance of this beer is quite nice - light in colour, hazy with a thin white head. Mouthfeel is really quite nice. its a lot rounder than any beer I've brewed before in this style, which is definitely a testament to higher cacl levels. The flavour is bready, sweet and light with a difficult to define, but rounded out sweet finish. Notes of melon, passionfruit, citrus, lemon. The bitterness is a bit off. This beer seems to change a little every time I drink it, but there's been a consistent oilyness from the relatively huge dry hop, that is adding a quality to the beer which is like chewing on a hop pellet. It's not abrasive, but present. I really am enjoying this beer. I love the soft mouthfeel, the breadiness, the sweetness at the back and the hop flavours together. I'd think that next time, swapping Citra with the Galaxy would be really nice. Also, although not that noticeable, I think there is a very slight degree of oxidation in this beer, given that the dry hop was so massive, and that the nose is pretty light. It's hard to tell. Beyond that, I don't think I'll use ringwood again. A nice experiment, but not what I'm looking for. It's a little too malty and finicky for my liking. I was getting almost phenolic flavours the first week I sampled this beer that I'm not getting now. Who knows. On to the next one!
