Many don't believe their sleep dream can carry on when they're awake.
This is my ongoing series of beers aimed at creating my huis saison that I've been developing now for around 5 years. This is a remake of the last batch I made in this series. The beers from that iteration turned out so well - especially the Tired Hands yeast and my Huis Yeast - and so I've decided to make it again to see if I can replicate them, scale it up and attempt some fruit additions. The process and amounts of grain all seem to work well together, so I'll be looking to refine with small changes the next time I make it.

Bohemian Pilsner 62%
Rye 13.5%
Wheat 13.5%
Flaked Oats 11%
Hops
7g - Warrior, Type: Pellet added at First Wort
100g - Cascade, Type: Pellet, AA: 6.9, Use: Whirlpool 30 minutes 80C
Mash Guidelines
1) Infusion, Temp: 65 C, Time: 60 min
2) Sparge, Temp: 77 C, Time: 10 min
Yeast
Fermenter 1: Saison Brett Blend Yeast Bay slurry + starter generation 6
Fermenter 2: Tired Hands Ourison cultured dregs, generation 2
Water
Amsterdam Source + 1.8g Campden and 2.6g Gypsum added to mash
Mash add: 5ml Lactic Acid = 5.32 pH
Sparge add: 0.4g Campden
Boil Add: 1.3 gram CaCl
5ml Lactic Acid
Post-Boil: 5.10 pH

2.3L water added to each fermntor
Primary starts at 22C
Day 3(27)-6(30): Increased by 1C everyday until 25C
2022/04/01: add x2 cubes of oak to each, and transfer 1.5L of each together into a jug with 330 grams of wild blackberries picked from NDSM and 1 cube of oak.
2022/05/06: Bottled 3.3g to 3.0 vol
@bottling: Sample of the fruit portion is tasting already really nice. A fluffy, light, tart, fruity and somewhat funky beer that has just a bit of oak coming through in the finish. The fruit works well with the style.
The TH and House both had a slightly strange aroma in the keg that I noticed before in the Fantome beers. I'm not sure what would be causing it. Both taste already really exciting. I actually think I might prefer the House version at the moment, but I'm curious to see how they both develop.
