Inspiration
This beer is a combination of Tolhuis I and Tolhuis II, with dregs of a bottle of Tired Hands' Early Camel Skull, and a recently bought bottle of 3 Fonteinen's Oude Gueuze. This is a relatively new pursuit for me, so I'm looking forward to seeing how this beer develops.

Initially fermented in a keg (that I've now decided to use for regular beer production instead):
Tolhuis I 2.5L @ 1.008
Tolhuis II: 5L @ 1.011

2020/09/09
Beer transferred to a 5L jug, with 20cl of Tolhuis IV added to try and encourage a bit of fermentation to scavenge for oxygen that may have been imparted from transfer. Gravity is now 1.004
Beer tastes already really interesting. I'm pretty surprised how quickly the lacto was able to assert itself in the beer. The yeast alone with this bit of aging has already turned this beer into something far better than it was in either of its clean versions. I'm still getting a bit of a bitterness at the back of the beer. I'm hoping that the beer continues to develop and become more complex as it moves towards terminal gravity. I'm not sure which yeast I taste more, but I feel that I taste the assertive acidity of the Tired Hands beer, and the beginnings of the 3 Fonteinen wild range of complex sour flavors.
Tasted 2020/11/12: Smells really nice, floral, fruity and sour. and barnyard hay funk coming through. Taste is strawberry forward and cherry-like. Not very strong, but really pleasant and drinkable. Not completely funky, but just enough that the rustic, barnyard like flavours are coming through. Really nice.
