Inspiration
This recipe is similar to one that I've done in this series before, but I wanted to see if I could remake it better than before given what I've learnt since. I also wanted to do a lower ABV hoppy beer this time. I'm really looking forward to seeing how Eclipse hops taste with the Citra and Galaxy. I'm hoping that with the slightly revised grain bill, which was essentially what I had on hand, that it still ends up tasting the way that it did before.

Final Gravity: 1.012
ABV (standard): 5.60%

Extra Pale Marris Otter 75.5%

Warrior 2 g @ FW
Citra 70 g @ Whirlpool for 30min at 80C
Citra 100g @ Dry Hop
Galaxy 50g @ Dry Hop
Eclipse 50g @ Dry Hop
Mash Guidelines
67 °C for 45 min
76 °C for 10 min

5.5g CaCl(added to mash), 1 gram Canning Salt(added to boil)
Notes

Add 6ml
Mash pH: 5.35
Pre-Boil: 19L/1.046
Add 4ml: 4.80 (a little lower than ideal)
Post-Boil: 1.055
Post-Boil pH: 5.25
Add 0.5ml to fermentor for a target of 5.10
Initial post-boil sample tastes more bitter than usual. I'm not sure if I can attribute this to the slightly larger whirlpool or possibly something to do with the combination of the pH and the hopping.
Beer begins at 19-19.5C
30/04/2021: 1.023, up to 22C
03/05/2021: 1.015 Tastes already incredibly juicy, much more than ever before with this beer thanks to the whirlpool. Still raw, with a graininess, but nothing unexpected for this stage.
05/05/2021: 1.012, Down to 13C and Dry Hop
06/05/2021: Down to 3C
07/05/2021: Package, this was drank very quickly, so I'm only able to write about it now from memory. It was an incredibly juicy and full beer while not being overpowering at all. The hops hadn't really mellowed enough, so there was a slight feeling of them coating your mouth. Overall, this was one of the best IPAs I've ever made.
