Inspiration
Been a while since I brewed, so I'm looking forward to starting off again with a new New England Pale Ale. This recipe is based on the previous iteration called "Light Chords" that turned out really well and the gold medal winning American Homebrewing Association New England IPA for 2021. The use of Golden Promise was out of necessity because I was out of Maris Otter. The original AHA recipe also mashed higher and had 20L, but knowing my yeast I figured that it may end up being too sweet at the end, so I mashed lower and cancelled the 20L.

Original Gravity: 1.055
Final Gravity: 1.014
ABV (standard): 5.40%

Warrior 6g @ 45
Citra 75 g @ Whirlpool for 20min at 80C
Citra 25g @ Dry Hop
Galaxy 105g @ Dry Hop

Mash Guidelines
67 °C for 45 min
76 °C for 10 min
Yeast
LalBrew® Verdant Brewing x 2
Water
Amsterdam Source boiled for 2 minutes
1.35g Campden (added to mash), 6g CaCl(added to mash)
0.3g Campden (added to sparge)
1 gram Canning Salt(added to boil)
Add 5ml Lactic
Mash pH: 5.30
Pre-Boil: 20L/1.046
Add 3ml: 4.90
Post-Boil: 1.055
Post-Boil pH: 5.00

Wort is already tasting nice and very milky/hazy/full-bodied
Beer begins at 19C
28/11/2021: 1.016 and up to 22C, beer appears to have finished fermenting at a record speed. I'm a little concerned at how fast this fermented, since I've never experienced this in the past. I will just continue with the d rest now for two days.
30/11/2021: Down to 10C
3/12/2021: Add dry hops
5/12/2021: Keg beer
7/12/2021: Very nice beer with a strong hop aroma and flavor throughout. Some small amount of residual sweetness is balanced by the bitterness of the beer, but I prefer that both are lower (less sweet and bitter). The colour is slightly darker than my usual beers in this series from the Golden Promise. I will likely not use it again. The dry hop on this seems to have gone well and should be my standard now. The beer is slightly too thin for me, I miss the creaminess from the flaked adjuncts. The wheat in this alone makes it too wheat forward for my taste, but this may also mellow out in some time. Good carbonation and a dangerously drinkable beer. I'm overall happy with what I learnt from this, and hope to go back to what I did with Light Chords and combine it with the better parts of this.
20211211: Wasn't happy with how it was tasting, so added in 25g more of Galaxy into the keg with a tea bag and string. Hopefully this will liven up the hoppiness again.
